Sitting atop ivy is uccello. This Italian restaurant provides a poolside oasis in the Sydney CBD.

The recently refreshed uccello takes its cues from the Italian coastline. Chef Nigel Ward’s menu makes the most of the restaurant’s wood-fired oven and charcoal barbecue and is inspired by the traditional recipes and techniques he picked up on his travels throughout regional Italy.

At the heart of Ward’s cooking is an appreciation of provenance and a commitment to extracting every drop of flavour out of an ingredient. He works closely with small-scale NSW farmers and producers and delivers a restrained and humble menu, where the product is the hero of the dish.

And, of course, there is a drinks list to match the relaxed, poolside vibe. Classic cocktails are given an Italian edge with provincial ingredients and produce. The Establishment Garden, part of the Establishment Bar, is a welcome reprieve from the hustle outside. Set yourself up for the day with breakfast, arrange a casual work meeting, stop by for lunch or dinner, or grab a drink after work; the space is yours to make what you wish. This space can accommodate up to 150 guests.

Choose from Establishment Garden's extensive breakfast menu, or, later on, there’s everything from pad thai to fish and chips and bar snacks. Establishment Garden's little oasis in the city is also where you’ll find their seasonal cocktails.
