Darling Glebe is a contemporary brasserie at 134A Glebe Point Road, Glebe, created by chef-restaurateur Jeff Schroeter and set within a historic sandstone setting. The venue blends French-inspired cuisine with Sydney character, featuring heritage architecture, velvet-lined interiors, a martini-focused lounge and an extensive wine collection. Its five distinctive event spaces offer a range of private dining and function experiences, from intimate chef-led dinners to larger celebrations and corporate events. The Dybka Private Dining Room is Darling Glebe's most intimate dining space, tucked away from the main dining areas and designed for private gatherings and discreet conversations. The softly lit room features heritage brick, velvet details and distinctive etched-glass artworks, including a round window depicting pheasant feathers, a hunter's rifle and bowler hat, alongside a gothic arch featuring a school of swirling fish. The artworks were hand-engraved by celebrated Australian glass artist Anne Dybka OAM, using dental tools, and form a unique part of the room's heritage.
