Darling Glebe is a subterranean brasserie at 134A Glebe Point Road, Glebe, created by chef-restaurateur Jeff Schroeter. Set within a historic sandstone setting, the venue combines French-inspired cuisine with a contemporary Sydney character, featuring velvet-lined interiors, heritage details, a martini-focused cocktail lounge and an extensive wine offering. The restaurant's menus reinterpret French classics with seasonal Australian produce, while its private dining spaces provide more intimate settings for special occasions, client entertaining and celebrations. The Chef’s Table is Darling Glebe’s most intimate private dining experience, accommodating up to four guests in a tucked-away position beside the kitchen and colonnade. Designed to give diners a front-row view of the culinary action while maintaining an intimate atmosphere, the table offers a choice of à la carte, table d’hôte or chef-designed degustation menus on Fridays and Saturdays. On selected quieter evenings, the space transforms into an intimate French Omakase experience led by Chef Jeff Schroeter, with no set menu and dishes guided by the chef's creativity and seasonal ingredients. The venue can also tailor menus to the occasion, with the sommelier available to pair wines from its developing cellar collection.
